Ingredients for mutton pulao-
350 grammes of lamb or mutton
2 quarts rice
4 cardamom pods, black
1 teaspoon black peppercorns
4 red chilies, whole
Cloves, 6
1 sachet cinnamon (1 inch)
4 tblsp ghee, large
1 cup finely chopped onion
1 teaspoon salt, a quarter teaspoon of Kashmiri red chilli powder, and a quarter teaspoon of all spices (in powder form), mashed
2 c. boiling water (for rice)
1 colour that adds a smidgeon of food

To cook mutton pulao, start by heating ghee in a pan. Add cardamom, black pepper, cloves, and red chilli to it after that. When all of these ingredients have darkened in colour, add the onions and cook them. Then toss in all of the spice components, as well as the meat, salt, and red chilli powder. Fry the meat until it is brilliantly coloured. Then pour in two glasses of water. After that, after boiling it once, turn off the heat and, when the meat is soft, remove it from the pan and set it aside. Now make three cups of liquid, which means you’ll need to add enough water to make the mixture a full three cups. Combine the liquid, meat, and rice in a mixing bowl. Bring it to a boil only once. Cover the pan and light the flame. Cook for roughly five minutes at this point. After that, add the food colouring from the top and simmer for seven minutes with the pan covered. Serve immediately.
